It seems like I am always running late and eating on the go. Eating healthy is hard enough, eating healthy on the go can be even harder! Since college I have always loved Ramen noodles. Ramen noodles got me through so many tight months when I was younger. I still love and savor a nice packet of Ramen noodles and they are great when you are on the go, but the amount of sodium they have is astounding! I just can't bring myself to consume that much sodium these days.

I have found an amazing alternative to Ramen noodles that is not only super low in sodium, but low in calories and carbs. Yes, you read that right, low in calories and low in carbs. What I am talking about is Shirataki Noodles and they are phenomenal.

Shirataki Noodles are Japanese noodles made from a certain type of yam. They have zero calories, zero carbs, zero fat, and zero sugar. Shirataki Noodles come pre cooked in plastic packets. They don't need cooking, only rinsing and heating if you so desire.

Shirataki noodles are pretty much tasteless, but they will take on the flavor of whatever dish, sauce or liquid that they are combined with. They will take on more flavor the longer they are exposed to a sauce or dish and more so if they are heated or marinated in a sauce, liquid or dish.

So here is how I make my quick and sodium free noodles on the go! You will need a packet of Shirataki noodles, a packet of sodium free chicken bouillon, a sink, a microwave, and cup/bowl and a fork.

  1. Carefully poke several holes in the bottom of a package of Shirataki Noodles.
  2. Open the top of the noodle packet and rinse in the sink letting the water drain through the holes in the bottom of the packet.  Rinse for one minute until the noodles are clean.
  3. Pour the noodles into a cup/bowl.  Add a half a cup or so of water along with one packet of sodium free chicken bouillon and stir.  Microwave the contents for a few minutes stirring half way through.
  4. Let stand for a couple minutes to cool, stir and serve.

This is an amazing way to enjoy a healthy and low carb meal on the go. I use this quick trick all the time. You can mix in any other low sodium flavoring as a substitute for the chicken bullion. Good luck and happy eating!
