I am sitting in the foyer of my doctor’s office waiting to hear my test results and whether my switch to shirataki noodles as a large part of my diet has helped me get on the track to better health.

I had been worried about my weight for a long time but it seemed impossible to do anything about it. It was as if I just had to look at food, any type of food, and I could feel the pounds stacking onto my waistline. The cruncher was when I visited my doctor and he looked at me sternly over his bifocals and told me that my cholesterol and blood pressure results were not acceptable, that I was heading for some serious health problems if I didn’t get things under control.

The first thing I did when I went home was I cried. Once I had run out of tears I decided that this was going to be a turning point in my life and searched for foods that could help me on the internet vowing to give up fatty, fried and junk foods from that moment on to get myself healthy. So with a big glass of chilled water and lemon I sat down in front of the computer screen with a pad and pen to find some answers.

I found some really great websites that talked about exercise, okay so I decided to go for a long walk with my dog every morning and every evening. I then found this website talking about shirataki noodles. Now I have always been a fan of Chinese food but wasn’t really aware of other Asian foods and I had never heard of shirataki noodles and this site had some very interesting information. Shirataki noodles are made from Konjac flour, which comes from the roots of the Konjac plant usually grown in Japan and China. According to this site, shirataki noodles are also high in fiber with no calories, this sounded like something I wanted to find out more about.

I looked at my paper after I had finished my bit of research and the first thing to do was clean out the fridge and get rid of all of the unhealthy foods that were inside. I was horrified when I finished, it was virtually empty with a couple of small containers of natural yoghurt looking lonely inside. Now for a walk to the local supermarket to see if they have any shirataki noodles in stock and some yummy vegetables to go with them.

Breathing a bit heavy when I arrived at the supermarket I bypassed the soda, chips and chocolate aisles and headed to the Asian food section for shirataki noodles. I found them really easily and was surprised that the shirataki noodles are already cooked and packaged in liquid so they are easy to heat up; I just need to add a few ingredients for the flavors I want.

I grabbed a few packets and headed to the fruit and vegetable section after picking up some tofu and soy sauce to see how it would all taste together. Garlic, ginger, spinach, what else can I add, I was starting to get excited about this big change in my life. By the time I had finished my trolley was full of a colorful array of vegetable and fruits. Mmmm I was hungry so I trotted off home with my goodies, past the take away food joints to prepare my lunch.

The first meal I cooked with shirataki noodles was okay, not great because I added a bit too much garlic, but I ate it all and felt very full so I didn’t feel like snacking on chocolate and chips. That was three months ago and I have been walking every day, my dog loves it, and I have just joined a gym with three sessions there a week with weights and water aerobics. I eat shirataki noodles at least four times a week and they are great because you can change the taste depending on the ingredients you add, they don’t have a flavor of their own. Oh and the best thing is they are so easy to cook after a long day at work!

So I will soon find out my test results from my doctor but the main thing is that I feel healthier, my skin is clearer and my clothes are no longer super tight on my body. No matter what the doctor tells me I know I am on my way to achieving my goals.
